Foodie Friday: "A Freezer is a Wonderful Thing"

Frozen foods have been in the news recently, but the technique for freezing food goes back decades.  Cooperative Extension encouraged farm women to freeze produce and meat as early as the 1940s.   For many years Nita Orr was the frozen food expert for North Carolina Cooperative Extension.  During the 1950s and 1960s she prepared several pamphlets on the topic, including this one from 1958 ("Remember," she says at the end of the pamphlet, "a freezer is a wonderful thing, but it will not do everything.")  Perhaps not all of her advice is appropriate today, but you might want to try your hand at one of the frozen food crossword puzzles that she distributed (we love crosswords in Special Collections!).  There are more historic extension materials on frozen foods that you can explore on our Rare & Unique Digital Collections website.  Or contact Special Collections if you are interested in researching the history of frozen foods.
