Fermentology

Fermentology is a digital collection of written and media works about the culture, history, and science of fermented foods. 

 

Overview

Fermentology began as an online seminar series created by the Public Science Lab and the Department of Applied Ecology at NC State. The Libraries gathered and recontextualized the seminar talks as a digital collection of videos, written works, recipes, and additional media. Fermentology is an experimental form of public scholarship that invites interested viewers to become readers and engaged participants in the ideas presented.

The project includes:

  • videos from the seminars
  • interviews 
  • art, media, and visual works
  • articles based on the seminar presentations and essays
  • featured recipes 

This project is an example of what a twenty-first century cooperative extension publication could look like, and it showcases some of the roles libraries can play in the production and dissemination of open knowledge and experimental scholarship.

Results
