Friends of the Library--In Memoriam, Ivan D. Jones
Ivan D. Jones, professor emeritus of food science and a life member
of the Friends of the Library, passed away on December 5, 2006,
just five days shy of his 103rd birthday. He is survived by two
children, Ivan Jones Jr. and Lucia Fisher, eight grandchildren,
and twelve great-grandchildren.
A native of Holdrege, Nebraska, Jones received a bachelor's degree
in chemistry from Nebraska Wesleyan University and a doctorate
in agricultural biochemistry from the University of Minnesota.
He came to NC State in 1930 as an associate horticulturist. In
1933 he initiated the NC State program in fruit and vegetable processing.
The program was expanded in 1935 through a cooperative arrangement
with the U.S. Department of Agriculture, a partnership that continued
for twenty-five years.
He also assisted in developing extension programs in home and
commercial preservation of fruits and vegetables. He became a professor
in the food science department in 1961, when the department was
created. After a distinguished career, which included United Nations
and other international consultations as well as memberships in
numerous honorary and professional organizations, Jones retired
as professor emeritus in 1970.
In 1995 he created the Lillian Tyler Jones Endowment in
memory of his wife. This endowment supports the NCSU Libraries'
human nutrition collections in all formats. Memorial donations
